Today’s report comes from Pran Buri, the town about 20 minutes by car from Hua Hin. We received a catch that included some substantial fish: a 30kg Bonito, a 13kg Cobia, and an 8kg Spanish mackerel. (•̀_•́)✨
Fish Details from the Port
The Bonito weighed in at 30kg. This is a good size, and it was landed from the waters off Pran Buri. We also brought in a 13kg Cobia, a strong fighter from the sea. The Spanish mackerel was 8kg. These fish were all caught in the waters we work with regularly.
Our Handling Process: From Sea to Freezer
The process begins the moment the fish are landed. Fishermen ice-stun them on the boat. After we purchase them at the port, which takes about 10 minutes, we immediately move to our processing facility. This entire process, from landing to reaching the facility, happens very quickly. (≖ ͜ʖ≖)✨
Once at the facility, the fish are processed into sashimi fillets. This is followed by vacuum packing and then rapid freezing. Our goal is to get the fish into the freezer as fast as possible. Freezing and Storage
We use blast freezing to bring the fish down to -30℃. This rapid temperature drop is key. Following the blast freeze, the fish are stored at a consistent temperature between -30℃ and -60℃. This ensures they remain in their best possible condition until they reach you. We maintain these low temperatures rigorously.
