Fishing Details from Pranburi 💪
The fish landed from Pranburi today are all of excellent quality. We secured 18kg of Black pomfret , 11kg of Herring scad, and 15.5kg of Indian threadfish. Additionally, we brought back 3kg of Lobotidae. These are all wild-caught fish from offshore Pranburi, about a 20-minute drive from Hua Hin. Properly processing these fish is a very important job. 💪🏻
From Harbor to Processing: Speed is Key 💪
The process begins the moment we purchase the fish at the harbor. Our goal is to minimize the time from landing to processing. After the fishermen induce a state of tonic immobility with ice on the boat, we make our purchase. From there, it's a race against time. Our processing facility is located very close to the harbor. We aim to transport the fish to the facility within 10 minutes of purchase. This swift transfer is crucial for maintaining the fish's condition. 💪🏼
Processing and Flash Freezing 💪
Upon arrival at the facility, the fish are processed into sashimi-grade fillets. This requires meticulous preparation to ensure each fillet meets our standards. After filleting, the fish are vacuum-sealed. This protects the fillets and prepares them for the next critical stage: flash freezing. We use flash freezers to rapidly lower the temperature. This rapid freezing process is essential; it helps preserve the texture and quality of the fish. The fish are frozen at temperatures ranging from -30°C to -60°C. 💪🏽
Storage Conditions 💪🏻
After flash freezing, the fish are moved to our cold storage. Here, the temperature is consistently maintained between -30°C and -60°C. This low temperature is vital for long-term preservation, ensuring the fish remain in optimal condition until they are ready for distribution. We carefully monitor these temperatures. It’s a demanding task, but necessary for the quality we strive for. 💪🏾
