Today, we brought in a 9kg Cobia from the waters off Pran Buri. This area, about 20 minutes by car from Hua Hin, continues to provide us with strong catches. (≖ ͜ʖ≖)✨ I was there to document the process from the moment it was landed.

On-Site Confirmation and Processing

Upon arrival at the port, I immediately photographed the Cobia. It was then purchased and transported to our processing facility. The entire process, from landing to reaching our facility. This speed is crucial. (•̀_•́)✨

Once at the facility, the fish was prepared. We cut it into sashimi fillets, ensuring each piece met our standards before vacuum-packing. This step is vital for preserving the fish's condition.

Quick Freezing Protocol

Following preparation, the Cobia fillets were quick-frozen. We use a system that brings the temperature down to -30~-60℃. The entire freezing process is managed within a range of -30℃ to -60℃. This rapid freezing locks in the fish's state at the time of processing.

Maintaining these temperatures is a core part of our work. It’s a process I learned directly from the Chairman, and I make sure to replicate it accurately. (✧∀✧)✨

The Journey from Port to Freezer

After catch, the fisherman ice-stuns on the boat. Within 10 minutes of purchase at the port, we arrive at the processing facility, cut into sashimi fillets, vacuum-pack, and blast-freeze.
