Procurement Records in Plumtree 💪

Today, I procured Jack Mackerel and Barracuda off the coast of Plumtree. That's 10kg of Jack Mackerel and 12kg of Barracuda. Upon arrival at the port, I carefully inspected each fish under the direction of my senior, KO. 💪🏻

Fish Selection and Purchase 💪🏼

At the port, fishermen were displaying fish that had just been landed. From among them, I selected the Jack Mackerel and Barracuda for today's procurement. It's important to directly see and touch the fish to confirm their condition. Weights are also measured accurately. 💪🏼

The Process Until Arrival at the Store

After landing, the fishermen ice the fish on board. After purchasing at the port, they are quickly brought to the processing plant. They are processed into sashimi fillets, vacuum-packed, and then flash-frozen. I constantly monitor this entire process on-site. 💪🏽

Processing at the Plant 💪🏽

The fish brought to the processing plant are immediately processed into fillets. The work is done carefully, checking the flesh quality, color, and fat content. After this, they are vacuum-packed and placed in a flash freezer at minus 30°C. 💪🏽

The Importance of Flash Freezing 💪🏾

Flash freezing is essential for preserving the quality of fish. At GYOTAK, we lock in the freshness of the fish in our flash freezers at -30°C to -60°C. This allows us to strive to deliver fish that are close to their condition at the time of landing even after thawing. 💪🏾

NINE's Impressions 💪🏿

While learning a lot from my senior KO, I am also rapidly improving my processing and procurement skills. As a member of GYOTAK BOYS, I will continue to actively engage in the physical labor on-site. 💪🏿
