Indian threadfish from Pran Buri

Today, we sourced 12kg of Indian threadfish from the waters off Pran Buri. Pran Buri is located about 20 minutes by car from Hua Hin. These fish were brought to the port and made available for purchase.

Arrival at the Port

The Indian threadfish arrived at the port. We confirmed the catch and proceeded with the purchase. The total weight recorded at this stage was 12kg.

Processing Facility Procedures

After purchasing the fish at the port, we transported them to our processing facility. This transfer occurred within 10 minutes of the purchase. Upon arrival, the fish were immediately processed.

The process involved preparing them as sashimi fillets. Following filleting, each portion was vacuum-packed. This step is crucial for maintaining the condition of the fish.

Blast Freezing

Once vacuum-packed, the fillets were transferred to our blast freezer. This rapid freezing process lowers the temperature to between -30℃ and -60℃. This ensures the fish are preserved at their point of catch condition.

We maintain detailed records of the entire process. This includes the time of purchase, arrival at the facility, and the start of the freezing process. Temperature logs are also kept.

The Journey from Water to Freezer

Water temperature influences the catch. After landing, the fisherman ice-stuns on the boat. Within 10 minutes of purchase at the port, we arrive at the processing facility, cut into sashimi fillets, vacuum-pack, and blast-freeze.

Our facility operates under strict temperature controls. The storage temperature is maintained between -30℃ and -60℃. This adherence to temperature protocols is a key part of our operation.

My Perspective

Securing fish like the Indian threadfish requires consistent effort. The location off Pran Buri provides a consistent source. My focus remains on documenting each step accurately. The records we keep are a reflection of this commitment.
